Preheat the oven to 400°F. Line a sheet pan with parchment paper and give it a spray with Wagyu Beef Tallow Cooking Spray.
In a bowl, toss halved baby potatoes with minced garlic, a dollop of Wagyu Beef Tallow, salt, pepper, and a sprinkle of fresh thyme. Spread them out on the sheet pan.
Pat chicken breasts dry. Rub them with a mixture of smoked paprika, cumin, salt, and pepper. Place on the sheet pan alongside the potatoes.
Toss cherry tomatoes and onion slices with Wagyu Beef Tallow and season with salt and pepper. Add to sheet pan.
Roast for about 30 minutes. The chicken should reach an internal temp of 165°F, and potatoes crispy. Halfway through, spray again with Wagyu Beef Tallow to keep chicken moist and add crispness.
