- Cut potatoes, to desired slice size + shape. Try to be consistent. Put in bowl of water to rinse off surface starches.
- Preheat deep fryer/large pot filled with Wagyu Beef Tallow to about 350°.
- Work in small batches and fry until golden crispy on outside, creamy fluffy on inside. Remove from fryer, shake off excess oil.
- Season well with coarse salt. Enjoy while hot.
- Tip: If you are holding them, don’t let them steam onto themselves, instead, place in a single layer on a paper plate with paper towel/a perforated sheet pan.
