Ingredients:
● 1 part South Chicago Packing Wagyu Beef Tallow, melted
● 2 parts whiskey or bourbon
● 1/4 oz maple syrup
● Dash of Angostura bitters
● Orange peel, for garnish
● Crispy bacon, for garnish
Directions:
1. Combine melted Wagyu Beef Tallow and whiskey or bourbon in a sealed jar. Allow mixture to sit at room temperature for 4 hours.
2. Transfer jar to the freezer for 2 hours, or until the tallow has solidified.
3. Strain the infused whiskey through a fine-mesh sieve or coffee filter and discard the solidified tallow.
4. In a mixing glass filled with ice, combine 2 oz fat-washed whiskey, maple syrup, and bitters. Stir for about 1 minute until chilled.
5. Strain over a large ice cube in a rocks glass. Garnish with an orange peel and crispy bacon.
Tip: For an even richer flavor profile, use a high-rye bourbon and express the oils from the orange peel over the cocktail before garnishing.
